CROUTONS WITH CANNELLINI BEANS TOMATO AND BLACK OLIVES

INGREDIENTS (FOR 4 PEOPLE)

  • 200 g of cannellini beans
  • 100 g of taggiasche olives
  • 350 g of tomato sauce
  • 80 g of black olives
  • 8 slices of natural leavening bread
  • 1 teaspoon of smoked paprika
  • 1 golden onion
  • 1 clove of garlic
  • salt
  • pepper
  • extra virgin olive oil
  • parsley

PROCEDURES

  1. On the previous evening, rinse abundantly the cannellini beans under running fresh water and soak them for 12 hours.
  2. The next day rinse properly the cannellini beans and stew them for 50-55 minutes in a large pot.
  1. Meanwhile, chop up the onion and brown it in a drizzle of olive oil for a few minutes. Add the smoked paprika and the tomato sauce. Simmer for 5 minutes, adding a little hot water if needed, finally pour the stewed beans and the Taggiasche olives. Seasoning on the heat for 5 more minutes.
  2. Toast the bread and then rub one side of each slice with the garlic.
  3. Serve each crouton with the sauce of beans and olives, a drizzle of extra virgin olive oil, the chopped up parsley and a sprinkle of black pepper.
