This chickpea is a particularly prized variety because it comes from a microclimate that is conducive to this type of cultivation. The tradition has made these pulses particularly popular and they are now used in many recipes in various other parts of the world. AMÍO giant chickpeas are notable for their large size, thin skin and intense flavour.

Chickpeas are a great alternative to animal protein, especially if combined with cereals. In addition to their attractive colour and delicious taste, they are a valuable source of protein, carbohydrates and mineral salts, as can be seen in the daily reference intake (RI%). We recommend soaking these chickpeas for 12 hours. After soaking, rinse them in cold water before putting them in a pot with 500ml of water for every 100g of chickpeas.

Allow around 70g per person: bring the water to a boil before covering and cooking on a low heat for 55-60 mins.

Once cooked, add salt for flavour and to prevent the chickpeas from becoming hard and crunchy. If using a pressure cooker the cooking time should be halved.
